Sweet and Sour Chicken Recipe

Soooooo good! Great served over white rice

Ingredients
1 pound chicken breast, cubed
1 tbsp olive oil
1/2 green bell pepper, sliced
1/2 red bell pepper, sliced
1 cup carrots, strips
1 clove garlic, minced
2 tbsp cornstarch
1/2 cup soy sauce
16 ounce pineapple chunks
2 tbsp brown sugar
1 tsp ground ginger
Directions
  1. Brown chicken in oil in a large skillet over medium-high heat. Add both peppers, carrots and garlic and stir fry for 1 to 2 minutes.

  2. In a small bowl, combine cornstarch and soy sauce and mix together; pour mixture into skillet, along with the pineaplle and liquid, vinegar, sugar and ginger. Stir together and bring to full boil
