Soooooo good! Great served over white rice
| 1 | pound chicken breast, cubed |
| 1 | tbsp olive oil |
| 1/2 | green bell pepper, sliced |
| 1/2 | red bell pepper, sliced |
| 1 | cup carrots, strips |
| 1 | clove garlic, minced |
| 2 | tbsp cornstarch |
| 1/2 | cup soy sauce |
| 16 | ounce pineapple chunks |
| 2 | tbsp brown sugar |
| 1 | tsp ground ginger |
- Brown chicken in oil in a large skillet over medium-high heat. Add both peppers, carrots and garlic and stir fry for 1 to 2 minutes.
- In a small bowl, combine cornstarch and soy sauce and mix together; pour mixture into skillet, along with the pineaplle and liquid, vinegar, sugar and ginger. Stir together and bring to full boil
