For Slow Cooker - very, very good!
| 4 1/2 | pounds beef |
| 1 | cup red wine |
| 1/3 | cup olive oil |
| 1 | tsp thyme |
| 1 | tsp black pepper |
| 10 | ounces bacon |
| 2 | cloves garlic |
| 2 | pounds pearl onions |
| 1/3 | cup flour |
| 4 | pounds potatoes |
- Place beef chunks in bottom of crockpot. Sprinkle with flour and stir to coat.
- Cut bacon (8 - 10 slices) into large chunks and saute. Add to crockpot on top of beef.
- Saute garlic and onion in bacon fat until soft. Add to crockpot.
- Mix wine, oil, thyme and pepper. Add to crockpot.
- Cover; cook on low 8-9 hours/ hight 6-8 hrs.
- Add potatoes to crockpot for last 3 hours of cooking.
