Cinnamon Raisin Bread Pudding Recipe

Ingredients
2 cups lowfat milk (1082)
16 g (16 packets) Equal® sweetener (83289), or 2/3 cup Equal® Spoonful
4 tbsp margarine (100526), melted, or butter
1 egg
2 egg whites
1 tsp cinnamon
1/4 tsp salt
140 g (4 cups) whole wheat bread, day-old, in 3/4-inch cubes
1/2 cup raisins
Directions
  1. Cut about 5 slices of bread into cubes and dry.

  2. Combine milk, Equal®, melted butter, egg and egg whites, cinnamon and salt in large bowl. Stir in bread cubes.

  3. Spoon mixture into ungreased 1-1/2 quart rectangular casserole. Bake in preheated 350 degree F oven 30 to 35 minutes or until pudding is set and sharp knife inserted near center comes out clean.
