Hearty low fat chili with lots of fiber. Use canned tomatoes and canned beans (although the canned beans up the sodium considerable).
| 1 | onion, diced |
| 32 | ounces tomato, pureed |
| 16 | ounces tomato, stewed with jalepeno pepper |
| 48 | ounces beans, pink or kidney or black |
| 1 | tbs vegetable oil |
| 1 | lb turkey, ground |
| 2 | carrots, diced |
| 1 | red pepper, diced |
| 1 | tbs chili pepper |
| 1 | tbs paprika |
| 1 1/2 | tbs cumin |
| 1 | tsp coriander |
| 2 | hot peppers, (jalepeno) diced |
- In dutch oven, heat oil and saute onions, red and hot peppers until onion is translucent (about 5 minutes)
- Add ground turkey and brown.
- Add spices and stir to release flavors.
- Add all the rest of the ingredients and cook on low heat stirring occassionally.
- Chili is complete when carrots are cooked thru.....about 50 minutes.
