Turkey Chili Recipe

Makes 8 servings


Hearty low fat chili with lots of fiber. Use canned tomatoes and canned beans (although the canned beans up the sodium considerable).

Ingredients
1 onion, diced
32 ounces tomato, pureed
16 ounces tomato, stewed with jalepeno pepper
48 ounces beans, pink or kidney or black
1 tbs vegetable oil
1 lb turkey, ground
2 carrots, diced
1 red pepper, diced
1 tbs chili pepper
1 tbs paprika
1 1/2 tbs cumin
1 tsp coriander
2 hot peppers, (jalepeno) diced
Directions
  1. In dutch oven, heat oil and saute onions, red and hot peppers until onion is translucent (about 5 minutes)

  2. Add ground turkey and brown.

  3. Add spices and stir to release flavors.

  4. Add all the rest of the ingredients and cook on low heat stirring occassionally.

  5. Chili is complete when carrots are cooked thru.....about 50 minutes.
