| 2 | lbs lean ground beef |
| 1 | large onion, diced |
| 1 | green pepper, diced |
| 3 | jalapeno peppers, diced |
| 8 | cloves garlic, minced |
| 1/3 | cup parsley |
| 1 1/2 | tsp cumin |
| 1/3 | cup red chili powder |
| 30 | ounce low sodium beef broth |
| 14 | ounce chili beans |
| 14 | ounce kidney beans |
| 28 | ounce tomatoes, crushed |
- In a large stock pot, cook the beef, onion, peppers, garlic and parsley until beef is no longer pink.
- Add chili powder and cumin and cook for another 2 minutes.
- Add remaining ingredients, bring to a boil, then lower heat and simmer for 90 minutes.
