Black Bean Tabouli Salad Recipe

This can be a main dish for lunch.

Ingredients
1 cup bulgur wheat
1 1/2 cups water
1 1/2 tsp salt
1/4 cup lemon juice
2 tbsp olive oil
4 tbsp onion
1 cup parsley
1 1/2 cup black beans
4 tomatoes
1 cup black olives
1 ounce feta cheese
Directions
  1. Add bulgur wheat to boiling water and let stand for 30 minutes.

  2. Combine olive oil, lemon juice, garlic, salt and pepper.

  3. Finely chop parsley, onion,and tomatoes

  4. Add black olives, black beans (drained and rinsed), and crumbled feta cheese.

  5. Mix all together well.
