| 1 | cup bulgur wheat |
| 1 1/2 | cups water |
| 1 1/2 | tsp salt |
| 1/4 | cup lemon juice |
| 2 | tbsp olive oil |
| 4 | tbsp onion |
| 1 | cup parsley |
| 1 1/2 | cup black beans |
| 4 | tomatoes |
| 1 | cup black olives |
| 1 | ounce feta cheese |
- Add bulgur wheat to boiling water and let stand for 30 minutes.
- Combine olive oil, lemon juice, garlic, salt and pepper.
- Finely chop parsley, onion,and tomatoes
- Add black olives, black beans (drained and rinsed), and crumbled feta cheese.
- Mix all together well.
