Jim's Potato Soup Recipe

Makes 3 servings


Tastes like clam chowder, but no clams. Very quick to make too.

Ingredients
4 cups potatoes, peeled, cubed
1 cup onion, chopped
2 cups chicken broth
2 tsp salt
1 cup milk
1 cup cream
3 tbsp butter
1 tbsp dried parsley flakes
1/8 tsp black pepper
Directions
  1. combine potatoes, onion, water and salt in large dutch oven.

  2. simmer, covered about 20 minutes or until potatoes are tender.

  3. stir in remaining ingredients. return to heat and cook until soup is thoroughly heated.
