This is one of my all time fav dishes...for special occasions or company...is good to stuff peppers with too. From recipezaar website.
| 2 | teaspoons olive oil |
| 4 | garlic cloves, chopped |
| 1 | small onion, diced |
| 15 | g crystallized gingerroot, chopped |
| 2 | cups cooked brown rice |
| 1/3 | cup mozzarella cheese, diced |
| 1/4 | cup heavy cream |
| 2 | teaspoons curry powder |
- Heat olive oil in a saute pan until very hot.
- Add the garlic, onion, and gingerroot and saute until you can smell the aroma.
- Add rice and mix well.
- Remove from the heat.
- Add the mozzarella, cream, curry powder, salt, and pepper.
- Preheat oven to 375*F.
- Place in small casserole dish greased with olive oil. Bake for 20 to 25 minutes. Serve hot. Enjoy!
