Ingredients

onion, chopped |

red bell pepper, chopped |

cups water |
| 1 |
cup uncooked brown rice |
| 1/4 |
cup finely chopped parsley |
| 1 |
salt |
| 1 |
ground pepper |
Directions
- Heat oil in a medium saucepan.
- Add onion and bell pepper; cook 3 monutes.
- Add water and rice; bring to a boil.
- Reduce heat; cover and simmer 50 minutes, or until rice is tender and liquid is absorbed.
- Fluff with a fork; stir in parsley.
- Season with salt and pepper if desired.
