Vegetable Frittata Recipe

Ingredients
1/2 small onion, diced
1 clove garlic, minced
2 mushrooms, diced
30 g deli sliced ham, shredded
2/3 cups egg beaters
1/4 tsp pepper
1/4 tsp salt
Directions
  1. Preheat broiler

  2. Saute onion and garlic a nonstick pan with ovenproof handle (spray with nonstick spray first, or 'fry' in some chicken stock)

  3. Add sliced and diced mushrooms and a cook for a few minutes

  4. Cook until liquid evaporates, about three minutes

  5. Add egg mixture to vegetables, season with salt and pepper, add ham, and cook until set

  6. Place pan under the broiler until lightly browned
