| 1/2 | small onion, diced |
| 1 | clove garlic, minced |
| 2 | mushrooms, diced |
| 30 | g deli sliced ham, shredded |
| 2/3 | cups egg beaters |
| 1/4 | tsp pepper |
| 1/4 | tsp salt |
- Preheat broiler
- Saute onion and garlic a nonstick pan with ovenproof handle (spray with nonstick spray first, or 'fry' in some chicken stock)
- Add sliced and diced mushrooms and a cook for a few minutes
- Cook until liquid evaporates, about three minutes
- Add egg mixture to vegetables, season with salt and pepper, add ham, and cook until set
- Place pan under the broiler until lightly browned
