Traditional New England Clam Chowder

Makes 8 servings

An extremely light and flavorful chowder. Traditional style, thin (no flour added) and deeeelicious!

Ingredients
2 cups clams
16 oz clam juice
1 1/2 ounce bacon, chopped into pieces
1 cup onion, chopped
1/2 cup celery, chopped
1 1/2 tsp butter
2 cups potato, chopped
1 tbsp thyme
1 tbsp bay leaf
12 oz fat free evaporated milk
5 oz evaporated milk
1 1/2 cup milk
50 g sherry (about 2 tbsp)
Directions
  1. Cook the bacon over medium heat until crispy.

  2. Drain the fat except for 2 tsp.

  3. Add the onion, celery and bacon into the pan and cook until the vegetables are soft, about 5 minutes.

  4. Add the clam juice, thyme, bay leaf and potatos and simmer over low heat about 15 minutes.

  5. Add the evaporated milks, 1% milk, sherry and clams.

  6. Simmer at least 15 minutes, the longer the better.
