| 1/3 | cup lime juice |
| 3 | tablespoons olive oil |
| 1 | minced garlic clove |
| 1 | teaspoon salt |
| 1/8 | teaspoon Cayenne pepper |
| 30 | ounce black beans, drained |
| 1 1/2 | cups corn |
| 1 | red bell pepper, chopped |
| 2 | tomatoes, chopped |
| 6 | scallions, sliced |
- combine lime juice through pepper in small bowl, mix well. in large bowl, mix remaining ingredients. mix dressing and pour over salad. toss to coat veggies and serve. makes 8 servings.
