Black Bean and Corn Salad Recipe

Salad, black beans, corn

Ingredients
1/3 cup lime juice
3 tablespoons olive oil
1 minced garlic clove
1 teaspoon salt
1/8 teaspoon Cayenne pepper
30 ounce black beans, drained
1 1/2 cups corn
1 red bell pepper, chopped
2 tomatoes, chopped
6 scallions, sliced
Directions
  1. combine lime juice through pepper in small bowl, mix well. in large bowl, mix remaining ingredients. mix dressing and pour over salad. toss to coat veggies and serve. makes 8 servings.

  2. calories: 327, fat: 20g, carbs: 32g, protein:9g

  3. *NOTE: these values include 1/2 cup olive oil, and one avacado.
