Challah Recipe

Makes 20 servings

Ingredients
1 package yeast
2 teaspoons sugar
1 1/4 cups water
4 1/2 cups flour
2 teaspoons salt
2 eggs
2 tablespoons olive oil
Directions
  1. combine yeast, sugar and 1/4 cup of warm water, let stand 5 minutes.

  2. sift flour & salt into a bowl, make a well in the center and drop in eggs, oil, remaining water and the yeast mixture.

  3. mix.

  4. knead on a floured surface until smooth and elastic.

  5. place in bowl, cover, set to rise for 1 hour.

  6. punch down, cover again, let rise until doubled in bulk.

  7. divide dough into three parts, roll between hands into strips of equal length, braid dough, put in loaf tin, cover and allow to rise til doubled in bulk.

  8. brush with egg yolk (sprinkle with poppyseeds if you like)

  9. bake at 350 for 50 minutes or until brown.
