| 1 | package yeast |
| 2 | teaspoons sugar |
| 1 1/4 | cups water |
| 4 1/2 | cups flour |
| 2 | teaspoons salt |
| 2 | eggs |
| 2 | tablespoons olive oil |
- combine yeast, sugar and 1/4 cup of warm water, let stand 5 minutes.
- sift flour & salt into a bowl, make a well in the center and drop in eggs, oil, remaining water and the yeast mixture.
- mix.
- knead on a floured surface until smooth and elastic.
- place in bowl, cover, set to rise for 1 hour.
- punch down, cover again, let rise until doubled in bulk.
- divide dough into three parts, roll between hands into strips of equal length, braid dough, put in loaf tin, cover and allow to rise til doubled in bulk.
- brush with egg yolk (sprinkle with poppyseeds if you like)
- bake at 350 for 50 minutes or until brown.
