A lighter version of spinach & cheddar quiche
|
Ingredients
| 1 |
cup Egg Beaters |
| 1 1/4 |
cups skim milk |
| 1 |
tbsp dijon mustard |
| 1/4 |
tsp salt |
| 1/4 |
tsp pepper |
| 1/4 |
cup whole wheat flour |
| 1 |
cup whole wheat crackers, crushed |
| 1 |
cup cheddar cheese, shredded |
| 1/2 |
cup cherry tomatoes, cut in half |
| 1/2 |
cup spinach, chopped |
Directions
- Mix egg substitute, milk, mustard, salt, pepper, and flour
- Add crackers and 3/4 cup cheddar cheese to mixture, then pour into pie dish
- Distribute spinach and tomatoes so they are submerged in mixture, then top with remaining cheese
- Bake at 350* for 30 minutes or until knife inserted comes out clean
