John's Healthy Pizza/Bread Dough

Makes 8 servings

John's dough using whole wheat and unbleached. If using for pizza, it has 121 calories per adult sized slice. Top with whatever you want, but be sure to add those calories in, too. You can substitute V8 for the water, that's excellent! You can also sprinkle some finely chopped spinach to the dough for some added veggie content. Can replace the olive oil with walnut oil for rolls or other non-pizza breads.

Ingredients
1 cup whole grain flour
7/8 cup white unbleached flour
2 tsp sugar
1 tsp yeast
3/4 cup water
1 tbsp olive oil, extra virgin
Directions
  1. Mix all in a bowl for 3 minutes.

  2. Mash/knead for 20 minutes until consistency has thickened and form into a ball.

  3. Leave in bowl on counter for 30 minutes.

  4. Repeat kneading.

  5. Roll out flat and form into a "pizza shape" (either rectangle, square, or circle?). For example, if a circle, it should be a little larger than 12" across.

  6. Let rise an additional 30 minutes. After first 15 minutes, turn on oven and allow to preheat to 425°F. This should take 15 minutes, as well, so when the oven is done preheating, add toppings to pizza dough and place in oven for 6 minutes.

  7. Allow 3 minutes to cool before cutting to ensure a clean cut.

  8. Other ideas: Exchange the water for V8 or beer. Try a cheese-less pizza, with a light layer of sauce and sauteed mushrooms and onions on top. You don't have to use it for pizza; make it into a loaf of bread, rolls, etc. The dough can be used for most any bread function.
