Summer Corn Black Bean Medley Recipe

Makes 8 servings


I made this up last summer...but it can be enjoyed year round. Flavors get even better as it sits.

Ingredients
15 ounce black beans, drained and rinsed well
15 ounce corn, drained
2 medium roma tomatoes, diced
2 tablespoons lime juice (more if desired)
2 garlic cloves, minced fine
1 teaspoon dried cilantro
1/2 teaspoon dried parsley flakes
1/2 teaspoon cumin
1 medium avocado, diced
1/4 teaspoon onion salt
1/4 teaspoon salt
1 dash black pepper
1 pinch cayenne pepper (more if desired)
1/2 red bell pepper, diced (optional)
Directions
  1. Mix all ingredients together in medium sized bowl.

  2. Allow to chill at least one hour before serving -- toss one last time.
