Good low-carb quick breakfast. Make ahead of time and freeze.

Ingredients
| 2 |
cups egg beaters |
| 2 |
cups frozen chopped spinach |
| 1/2 |
onion, sliced |
| 1/2 |
cup mozzarella cheese, shredded |
| 1/2 |
tsp. hot sauce |
Directions
- Microwave spinach and onion until spinach is thawed and onion softened.
- Combine all ingredients in large bowl. Season with salt and pepper if desired.
- Bake in muffin tin at 375 for 20 minutes. 1 serving equals 2 "muffins."
