quick low fat dinner service with rice or noodles
| 1 | c diced onions |
| 2 | t oil |
| 2 | lb chicken breast |
| 1 | c fat free chicken broth |
| 2 | T lemon juice |
| 2 | T dried thyme |
| 1/8 | t pepper |
| 1 | T corn starch |
| 2 | T water |
- pound chicken cutlets until thin if more than 1/2" thick
- saute onions in oil until just soft
- remove from pan and set aside.
- brown chicken until just cooked about 3 min per side, use cooking spray if needed to keep chicken from sticking
- add chicken broth, lemon juice, thyme, pepper and return onions to pan.
- Mix corn starch with water and add to pan. Heat until sauce thickens, serve
