Lemon Chicken Recipe

Makes 6 servings


quick low fat dinner service with rice or noodles

Ingredients
1 c diced onions
2 t oil
2 lb chicken breast
1 c fat free chicken broth
2 T lemon juice
2 T dried thyme
1/8 t pepper
1 T corn starch
2 T water
Directions
  1. pound chicken cutlets until thin if more than 1/2" thick

  2. saute onions in oil until just soft

  3. remove from pan and set aside.

  4. brown chicken until just cooked about 3 min per side, use cooking spray if needed to keep chicken from sticking

  5. add chicken broth, lemon juice, thyme, pepper and return onions to pan.

  6. Mix corn starch with water and add to pan. Heat until sauce thickens, serve
