Simple baked chicken with a honey/mustard marinade
| 6 | oz chicken (2 or 3 thighs) |
| 1 | tsp honey |
| 1 | tsp mustard |
| 2 | tsp soy sauce |
| 1 | oz brown rice |
| 4 | oz broccoli |
| 4 | oz green beans |
- Score the chicken thighs with a sharp knife. Combine the honey, mustard and soy sauce and use to coat the chicken. Set aside for 30 minutes to 1 hour. Preheat the oven to 200C Gas 7
- Bake the chicken thighs for 30 - 40 minutes and serve with the cooked brown rice and steamed vegetables.
