Ingredients

cups flour, sifted |

tsp salt |
| 1/2 |
cup sugar |
| 2 |
tsp baking powder |
| 2 |
tsp cinnamon |
| 2 |
tsp nutmeg |

cup pumpkin or cold, cooked mashed yams |
| 2 |
eggs |
| 2 |
tbs melted butter |
| 3/4 |
cup milk |
Directions
- Preheat oven to 400 degrees F.
- Sift flour, salt, sugar, baking soda, cinnamon and nutmeg together.
- In a separate bowl, beat 2 eggs.
- Add melted butter, milk adn pumpkin (or yams) to eggs.
- Combine liquid and dry ingridients but don't over mix.
- Fill greased muffin tins two-thirds full and bake for 20 to 25 minutes.
- You can add 1 cup chopped pecans and/or 2 tsp grated orange rind if you want. Add them to the milk mixture. They aren't included in the calorie count.
