Pumpkin Cranberry Pie Recipe

Ingredients
1 cup soymilk
4 tbsp cornflour
1 cup cooked pumpkin
1/2 cup cooked cranberries
1/2 cup raw sugar
1/2 tsp cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground ginger
1/8 tsp ground cloves
1 1/2 cups cereal (grape nuts)
1/2 cup apple juice
Directions
  1. Preheat oven to 190C/375F. Mix together the grape nuts and apple juice, and press into a 9" pie dish. Bake for 10 minutes, and allow to cool before filling.

  2. In a large bowl, mix together soymilk and cornflour and whisk until smooth. Add in other ingredients and mix thoroughly. Pour into crust and bake for 45 minutes, or until the filling is firm. Cool, and chill before serving.
