| 3/4 | cup spanish pilaf, Casbah, prepared |
| 16 | oz. Refried Beans, Green Chile & Lime, Fat-Free |
| 1/2 | onion, diced |
| 4 | oz. green chilis, diced |
| 12 | oz. olives, black, sliced |
| 1/2 | (16 oz.) bag tortilla chips, baked |
| 7 | oz. 75% Light Cheddar, Cabot, shredded |
| 1/2 | cup cilantro, chopped |
| 3/4 | cup salsa |
| 1/2 | cup fat-free sour cream |
- On a ceramic or oven safe plate, spread on beans, add rice, a little bit of salsa for flavor, then add the baked tortilla chips.
- After that, add your onions, olives, and green chilis. (You can add some mexican spice, and/or more salsa, if you want.) Then, add the shredded cheese, some more salsa, and bake @ 375 degrees until brown.
- Top with sour cream and cilantro when serving.
