Low-Fat Nachos Recipe

Nachos without guilt, using baked tortilla chips and low-fat cheese. Great for holidays, football games, or a weekend at home.

Ingredients
3/4 cup spanish pilaf, Casbah, prepared
16 oz. Refried Beans, Green Chile & Lime, Fat-Free
1/2 onion, diced
4 oz. green chilis, diced
12 oz. olives, black, sliced
1/2 (16 oz.) bag tortilla chips, baked
7 oz. 75% Light Cheddar, Cabot, shredded
1/2 cup cilantro, chopped
3/4 cup salsa
1/2 cup fat-free sour cream
Directions
  1. On a ceramic or oven safe plate, spread on beans, add rice, a little bit of salsa for flavor, then add the baked tortilla chips.

  2. After that, add your onions, olives, and green chilis. (You can add some mexican spice, and/or more salsa, if you want.) Then, add the shredded cheese, some more salsa, and bake @ 375 degrees until brown.

  3. Top with sour cream and cilantro when serving.
