Healthy, low-fat, oatmeal-chocolate chip cookies.
| 1 | cup applesauce |
| 1/2 | cup brown sugar, firmly packed |
| 1/4 | cup granulated sugar |
| 1/2 | cup egg substitute, equal to two eggs |
| 1 | tsp. vanilla |
| 1 1/2 | cups flour, all purpose |
| 1 | tsp. baking soda |
| 1 | tsp. cinnamon |
| 1/2 | tsp. salt |
| 3 | cups oats, quick or old fashioned, uncooked |
| 1/2 | cup chocolate chips, Trader Joe's semi-sweet |
- Heat oven to 350 degrees.
- Beat applesauce and sugars together.
- Add egg substitute and vanilla.
- Add combined flour, baking soda, cinnamon and salt; mix well.
- Stir in oats and chocolate chips; mix well.
- Drop by rounded tablespoonfuls onto un-greased cookie sheet.
- Bake 10-12 minutes or until golden brown.
- Cool 1 minute on cookie sheet; remove to wire rack.
- Makes about 4 dozen.
