I made this up combining a bunch of other recipes, pretty good though I say so myself!

Ingredients
| 1/8 |
cup molasses |
| 1/4 |
cup brown sugar |
| 1 |
egg |
| 1 |
egg white |
| 1 |
cup bananas |
| 1/2 |
cup unsweetened applesauce |
| 1 |
pinch of salt |
| 1 |
teaspoon cinnamon |
| 1/3 |
cup blueberries |
| 1/3 |
cup pineapple, chopped |
| 1/3 |
cup walnuts, chopped |
| 1 |
cup flour |
| 1 |
cup oatmeal |
| 2 |
teaspoons baking powder |
Directions
- grind the oatmeal in a food processor
- add flour, salt and baking powder to food processor and give it a quick spin or two
- mix wets, including mooshed banana and brown sugar
- mix fruit and nuts stir them with a bit of flour (I use frozen fruit so it doesn't get yucky at this point)
- add wets to flour mix and mix -- taking care not to overmix.
- add fruit and nuts to whole thing
- bake in minimuffin things for about 12 minutes at 375
