Fruity Banana and Applesauce Muffins

Makes 24 servings

I made this up combining a bunch of other recipes, pretty good though I say so myself!

Ingredients
1/8 cup molasses
1/4 cup brown sugar
1 egg
1 egg white
1 cup bananas
1/2 cup unsweetened applesauce
1 pinch of salt
1 teaspoon cinnamon
1/3 cup blueberries
1/3 cup pineapple, chopped
1/3 cup walnuts, chopped
1 cup flour
1 cup oatmeal
2 teaspoons baking powder
Directions
  1. grind the oatmeal in a food processor

  2. add flour, salt and baking powder to food processor and give it a quick spin or two

  3. mix wets, including mooshed banana and brown sugar

  4. mix fruit and nuts stir them with a bit of flour (I use frozen fruit so it doesn't get yucky at this point)

  5. add wets to flour mix and mix -- taking care not to overmix.

  6. add fruit and nuts to whole thing

  7. bake in minimuffin things for about 12 minutes at 375
