| 1/2 | lb lean ground beef |
| 3 | tbsp flour |
| 4 | cups tomato juice |
| 1 1/2 | tsp salt |
| 1 | large onion, chopped |
| 1 | clove garlic, minced |
| 1/8 | tsp pepper |
| 1 1/2 | cups skim milk |
| 8 | ounces mushrooms, sliced |
| 1 1/2 | cups rice, cooked |
- Combine flour, salt (this should be onion salt but the recipe builder didn't recognize that), and pepper in a large, microwaveable casserole dish.
- Cook ground beef in skillet, drain, remove and toss it with the flour mixture in the casserole dish to coat.
- Add onions and mushrooms to skillet and cook until soft, then add them to the casserole dish.
- Add all other ingredients and stir.
- Cook uncovered on high in the microwave 40 minutes, stirring occasionally, until thickened.
