Marg's Tomato Soup Recipe

Makes 6 servings


1 serving = 2 ladles or 1 1/3 cups

Ingredients
1/2 lb lean ground beef
3 tbsp flour
4 cups tomato juice
1 1/2 tsp salt
1 large onion, chopped
1 clove garlic, minced
1/8 tsp pepper
1 1/2 cups skim milk
8 ounces mushrooms, sliced
1 1/2 cups rice, cooked
Directions
  1. Combine flour, salt (this should be onion salt but the recipe builder didn't recognize that), and pepper in a large, microwaveable casserole dish.

  2. Cook ground beef in skillet, drain, remove and toss it with the flour mixture in the casserole dish to coat.

  3. Add onions and mushrooms to skillet and cook until soft, then add them to the casserole dish.

  4. Add all other ingredients and stir.

  5. Cook uncovered on high in the microwave 40 minutes, stirring occasionally, until thickened.
