Parre's Black Bean Chili Recipe

Simple chili recipe. The spices listed are the spices included in 1 package of Carroll Shelby's Original Texas Brand Chili Kit, except for the cumin and black pepper. I throw away the masa flour. You can use dried herbs instead of fresh for the basil/parsley. Cilantro should be fresh though. Makes 6 big servings.

Ingredients
596 grams ground beef, browned (2 lbs 90% lean, browned and drained)
6 cups black beans (4 15oz cans, rinsed and drained)
1 1/4 cups tomatoes (1 can diced chilies and tomatoes, I use Ro*Tel, do not drain)
1 large white onion, diced
8 oz tomato sauce (Hunts or similar)
16 oz water
1 tsp salt
1/4 tsp black pepper
1/2 tsp cayenne pepper
6 tbsp chili powder
1/8 tsp ground cumin
2 tbsp lime juice
1 clove garlic, finely chopped
2 tbsp fresh cilantro
2 tbsp fresh basil
2 tbsp fresh parsley
Directions
  1. Brown the ground beef, drain the oil. You can use leaner ground beef if you want but this recipe is already an A. :)

  2. Dump everything in a big pot and bring to a boil on medium-high heat. Cover and simmer on low for at least 20 minutes. Even better, slow cook it in a crock pot! I'm sure this would taste great after four hours on low!
