Banana Oat Muffins

Makes 12 servings

Roughly 85 calories per muffin. Without brown sugar, the caloric conent is reduced to 70 calories.

Ingredients
3/4 cup flour
3/4 cup oats
1 tsp baking powder
1 tsp ground cinnamon
1/2 tsp baking soda
1/4 tsp nutmeg
1/3 cup brown sugar
2 egg whites
1 cup banana, mashed, ripened
1/4 cup skim milk
1/2 cup unsweetened applesauce
Directions
  1. In a large bowl combine dry ingredients and mix until blended.

  2. In a small mixing bowl beat egg whites, banana, milk and applesauce.

  3. Stir in dry ingredients until just moistened. Spray muffin tin with PAM, or line with muffin cups.

  4. Fill muffin cups 2/3 full.

  5. Bake at 400 degrees for 15 minutes or until tops spring back when pressed.
