Black bean soup

Makes 4 servings

Very spicy soup with black beans and left over veggies

Ingredients
1 1/2 cups black beans
15 oz diced tomatoes
3 cups chicken stock
1 1/2 cup celery
1 1/2 cup onion
1 1/2 cups broccoli
2 tbsp olive oil
Directions
  1. Sautee onion and celery in olive oil. Deglaze with stock and add broccoli. Steam then add tomatoes and beans. simmer 1/2 hour. Add lots of cayenne and red pepper flakes.
