Homemade Refried Beans Recipe

Measurements do not have to be exact-- adjust the ingredients according to what you have at hand. Kidney beans are a very good source of cholesterol-lowering fiber. Just one cup of cooked kidney beans supplies 177.0% of the daily value for molybdenum (needed to get read of sulfites).

Ingredients
400 g Beans, Kidney, Cooked, Boiled, With Salt
1 cup salsa
1 tbs olive oil
Directions
  1. Rinse the kidney beans to remove excess salt.

  2. With the aid of a hand blender, mash the beans.

  3. Heat olive oil in a non-stick skillet over medium-high heat.

  4. Add the mashed beans and the salsa.

  5. Cook and stir the beans until they are bubbly.

  6. Continue cooking and stirring the beans for 5-10 additional minutes.

  7. For a virtually fat-free high quality protein, combine the refried beans with soft corn tortillas.

  8. Serve with low fat sour cream and guacamole.
