Delicious, my husband loves this recipe.
| 2 | tbsp butter |
| 1 | clove garlic, minced |
| 2 | tbsp all-purpose flour |
| 2/3 | cup vegetable broth |
| 2 | tbsp half-and-half |
| 2 | cups (10oz) spinach, chopped |
| 1/8 | tsp salt |
- In a 1 1/2 quart saucepan, melt the butter or margarine over medium-high heat. Add the garlic; cook, stirring 10 seconds. Stir in the flour until absorbed.
- Add the broth and half-and-half; cood, stirring with a whisk, until no lumps remain. Add the spinach and salt. Cook, stirring frequently, until spinach is cooked through, about 3 to 5 minutes.
- Note: I usually use fat free half-and-half but that was not recognized by the recipe analyzer. Variation is to substitute additional broth for the half-and-half.
