Creamed Spinach W/ Fat Free Half & Half Recipe

Delicious, my husband loves this recipe.

Ingredients
2 tbsp butter
1 clove garlic, minced
2 tbsp all-purpose flour
2/3 cup vegetable broth
2 tbsp half-and-half
2 cups (10oz) spinach, chopped
1/8 tsp salt
Directions
  1. In a 1 1/2 quart saucepan, melt the butter or margarine over medium-high heat. Add the garlic; cook, stirring 10 seconds. Stir in the flour until absorbed.

  2. Add the broth and half-and-half; cood, stirring with a whisk, until no lumps remain. Add the spinach and salt. Cook, stirring frequently, until spinach is cooked through, about 3 to 5 minutes.

  3. Note: I usually use fat free half-and-half but that was not recognized by the recipe analyzer. Variation is to substitute additional broth for the half-and-half.
