corn, beans, tomatoes & peppers with fresh herbs & lime juice dressing

Ingredients

cups beans,kidney |
| 1 |
cup corn, sweet |
| 1 |
cup tomatoes |
| 1/4 |
cup pepper,sweet green |
| 2 |
tablespoons parsley |
| 2 |
tablespoons basil |
| 1/4 |
teaspoon salt |
| 1/8 |
teaspoon pepper |
| 1 |
oz lime juice |
Directions
- Steam ears of corn. When cool, cut kernels from the cobs to yield 1 cup.
- Peel seed and chop the tomatoes.
- Finely mince the green pepper, parsley and basil.
- Combine with the salt, pepper and lime juice and mix well.
- Chill before serving
- Optional: Add the zest of the lime and a dash of your favorite hot sauce
