Ingredients

Directions
- NOTE: the tortellini I chose was similar in calories to the generic pasta on Calorie Count. (serving size 3/4 cup, 290 calories per serving). Fresh tortellini is best, if using frozen tortellini cook longer until tender
- Heat broth mixture - Bring broth, thyme, and bay leaves to boil, covered, in large saucepan and set aside
- Brown onion - Meanwhile, heat oil in large saucepan over medium heat until shimmering. Add onion (minced) and 1/2 teaspoon salt, increase heat to medium-high, and cook until lightly browned and softened, about 5 minutes.
- Add garlic, broth mixture, tortellini and cook - Stir in garlic (minced) and cook until fragrant, about 30 seconds. Stir into broth mixture, scraping up any browned bits. Add tortellini and cook until tender, 3-6 minutes
- Add spinach and season - Stir in spinach (chopped) and cook until wilted, about 2 minutes. Off heat, remove bay leaves, season to taste and serve.
