Tortellini Soup

Ingredients
8 cups chicken broth
1 teaspoon thyme
1 tablespoon olive oil
1 onion
3 garlic cloves
18 oz pasta
1 lb spinach
Directions
  1. NOTE: the tortellini I chose was similar in calories to the generic pasta on Calorie Count. (serving size 3/4 cup, 290 calories per serving). Fresh tortellini is best, if using frozen tortellini cook longer until tender

  2. Heat broth mixture - Bring broth, thyme, and bay leaves to boil, covered, in large saucepan and set aside

  3. Brown onion - Meanwhile, heat oil in large saucepan over medium heat until shimmering. Add onion (minced) and 1/2 teaspoon salt, increase heat to medium-high, and cook until lightly browned and softened, about 5 minutes.

  4. Add garlic, broth mixture, tortellini and cook - Stir in garlic (minced) and cook until fragrant, about 30 seconds. Stir into broth mixture, scraping up any browned bits. Add tortellini and cook until tender, 3-6 minutes

  5. Add spinach and season - Stir in spinach (chopped) and cook until wilted, about 2 minutes. Off heat, remove bay leaves, season to taste and serve.
