Leek and Potatoe Soup Recipe

Makes 4 servings


Easy thermos lunch

Ingredients
1 chopped onion
1 chopped leek
3 cloves garlic, minced
1 liter chicken stock
1 T olive oil
1 c chopped potatoe
1 salt and pepper to taste
Directions
Saute onions in oil. Add chopped garlic and leeks. Add potatoes and stir to get them all going. Salt and pepper and add stock. Simmer over medium heat for an hour or so. Puree with handheld mixer or blend in batches (careful!) in blender.
