Lemon Mushroom Soup Recipe

Makes 1 serving


lemon mushroom soup

Ingredients
1/2 chicken stock cubes
1 tbsp yogurt, plain, whole milk
1 tbsp lemon juice
1 tsp chilli powder
1 tsp cornflour
100 ml water
Directions
  1. Make up chicken stock with stock cube and water, bring to the boil

  2. Add 1 tsp of cornflour (mixed with a bit of of cold water) to thicken, boil for a minute or so

  3. Bring off the boil, add juice of half a lemon

  4. Add chilli powder

  5. Add mushrooms

  6. Simmer until mushrooms cooked

  7. Add yogurt.
