lemon mushroom soup
| 1/2 | chicken stock cubes |
| 1 | tbsp yogurt, plain, whole milk |
| 1 | tbsp lemon juice |
| 1 | tsp chilli powder |
| 1 | tsp cornflour |
| 100 | ml water |
- Make up chicken stock with stock cube and water, bring to the boil
- Add 1 tsp of cornflour (mixed with a bit of of cold water) to thicken, boil for a minute or so
- Bring off the boil, add juice of half a lemon
- Add chilli powder
- Add mushrooms
- Simmer until mushrooms cooked
- Add yogurt.
