Tortilla Recipe

Makes 4 servings


Potato, onion egg fried

Ingredients
4 medium potatoes
1 red onion
2/3 cup extra virgin olive oil
2 eggs
Directions
  1. Chop potatoes into small flatish chunks, dice onions

  2. Heat olive oil in pan, add potatoes and onion

  3. cook until potatoes are tender

  4. Drain all

  5. Mix with eggs in same pan so it forms a circle

  6. When cooked, use large plate and flip like a pancake onto the plate

  7. Replace otherside down to cook for about a minute

  8. Ready!
