Chicken Parmesan, Fat Free Recipe

Makes 16 servings


Instead of frying use George Foreman grill with sprayed olive oil to cook the chicken

Ingredients
3 pounds chicken breasts, boneless, skinless, sliced lengthwise
8 oz fat free mozzarella cheese
1 1/2 cups marinara sauce, low-fat
1 eggs, lightly beaten, use 2 eggs, (effective amount on chicken)
1/2 cup breadcrumbs, use as much as needed to coat (effective amount on chicken)
Directions
  1. Slice chicken breasts lengthwise

  2. Beat eggs mixed with water or soy milk

  3. Pour Breadcrumbs onto tin foil

  4. Dip chicken into egg mixture wetting both sides

  5. cover with breadcrumbs

  6. place on grill and cook until done

  7. Place cooked chicken into baking pan

  8. Pour marinara/tomato sauce over chicken

  9. Sprinkle mozzarella cheese over chicken

  10. Bake in oven at 400 deg until cheese melts and starts turning brown
