Instead of frying use George Foreman grill with sprayed olive oil to cook the chicken
| 3 | pounds chicken breasts, boneless, skinless, sliced lengthwise |
| 8 | oz fat free mozzarella cheese |
| 1 1/2 | cups marinara sauce, low-fat |
| 1 | eggs, lightly beaten, use 2 eggs, (effective amount on chicken) |
| 1/2 | cup breadcrumbs, use as much as needed to coat (effective amount on chicken) |
- Slice chicken breasts lengthwise
- Beat eggs mixed with water or soy milk
- Pour Breadcrumbs onto tin foil
- Dip chicken into egg mixture wetting both sides
- cover with breadcrumbs
- place on grill and cook until done
- Place cooked chicken into baking pan
- Pour marinara/tomato sauce over chicken
- Sprinkle mozzarella cheese over chicken
- Bake in oven at 400 deg until cheese melts and starts turning brown
