| 4 | slices Provolone Cheese |
| 2 | cloves Garlic, Crushed |
| 1/8 | cup Olive Oil |
| 1/4 | cup Apple Juice |
| 1/8 | cup Soy Sauce |
| 2 | tsp Black Pepper, Freshly Ground |
| 1 | tbsp Butter |
- Slice open (butterfly) the chicken breasts to make pockets for the stuffing.
- Stuff each chicken breast with 1 thin slice pastrami, 1 thin slice ham, and 1 slice provolone cheese. Spread crushed garlic inside each pocket as well, along with some freshly ground pepper.
- Close the pockets, and then coat chicken breasts with olive oil.
- Rub both sides of each chicken breast with freshly ground pepper. Coarse ground salt can also be added to taste.
- Sear the chicken for a minute or two on each side, preferably in a cast-iron pan with a small amount of olive oil directly over hot coals.
- Remove breasts from the black iron pan and place the breasts in a shallow pan, opposite the coals (Indirect Heating) at 325f-350f to finish grilling for approximately 20 minutes. Cooking time will vary depending on how big your chicken breasts are, and how hot your grill is. Chicken should be cooked to about 180f.
- Remove stuffed chicken breasts from heat to a serving plate.
- Add soy sauce, butter, and apple juice to the pan drippings, heat directly over hot coals, and then pour over the plated chicken for a tasty gravy.
- Serve and enjoy!
