Crispy Tuna Cakes
| 2 | cans tuna in water |
| 2 | eggs |
| 2 | scallions, chopped finely |
| 2 | teaspoons dijon mustard |
| 1 | teaspoon lemon juice |
| 1/2 | cup panko bread crumbs |
| 1/4 | cup olive oil |
- Mix tuna, eggs, scallions, mustard, lemon juice, and 1/4 cup of bread crumbs in a bowl.
- Refrigerate for at least 15 minutes. Form eight croquettes with the mixture. Coat with remaining bread crumbs. Fry in olive oil until golden brown.
