| 1 | lb chicken breast, boneless, skinless |
| 2 | tablespoons lime juice, fresh |
| 1 | tablespoon olive oil |
| 1/4 | teaspoon salt |
- In a large baking dish, arrange chicken in a single layer
- Add lime juice, oil and salt
- Turn chicken several times to coat
- Refrigerate, covered, 1 hour
- Grill chicken 3 or 4 minutes per side until no longer pink or 170 degrees internal temperature
- Remove from heat
- Slice into strips
- Serve with salsa & cheese
