Avocado Soup Recipe

Makes 2 servings


Chilled soup. Add diced tomato and cilantro to garnish, and salt and pepper to taste. (Tomato, cilantro, salt and pepper not counted in nutrition facts). Makes about 2 1-cup servings.

Ingredients
1 avocado
1/2 cup fat free yogurt
1/2 cup water
3 tbsps lime juice
Directions
Mash up 1 avocado, and add yogurt and water to it. Blend until smooth and creamy. Stir in lime juice, add salt and pepper to taste. Top off with tomato and fresh cilantro for garnish.
