Lemon mini muffins

Ingredients
2 1/2 cups self-raising flour
2/3 cup sugar
1 1/4 cups milk
1 egg
90 g applesauce
1/4 cup lemon juice
1 t lemon rind
Directions
  1. Sift dry ingredients, except 1/4 cup sugar

  2. Mix together liquid ingredients, except lemon juice

  3. Stir liquid into dry

  4. pour into muffin tin

  5. Bake 10min at 180'C

  6. Mix lemon juice and sugar to make a syrup

  7. Pour syrup over cooked muffins
