Whole Grain,Fruit & Nuts Pancakes Recipe

Makes 2 servings


any combination of fruit & nuts:apple, walnuts, pear,almonds, etc are just as good

Ingredients
1/2 cup Oat flour
1/2 c whole wheat flour
2 t baking powder
1/4 t baking soda
1 egg
5 figs, fresh,small
2 t pecans, chopped
1 T peanut oil
1 c buttermilk
1/4 c sugar free syrup
1/4 c syrup,light
Directions
  1. Mix dry ingredients together. Liquefy eggs-buttermilk in blender, and addto dry ingredients. Stir until just blended.

  2. Drop 1/3 c on hot griddle.

  3. combine syrups. Serve on hot pancakes.
