Great for a picnic. The calories might be a bit high on this because the recipe calls for ripping out the middle part of the bread.
| 1 | pound french bread, about 14 inches long |
| 4 | T extra-virgin olive oil |
| 1/3 | cup basil leaves, plus sprigs for garnish |
| 12 | ounce tuna, in olive oil |
| 2 | plum tomatoes, diced |
| 2/3 | cup kalamata olives, chopped |
| 1/2 | cup chopped sweet onion (such as Vidalia or Maui) |
| 2 | tablespoons fresh lemon juice |
- Slice french bread down the middle. Tear out the inside, leaving a 3/4" shell. Brush both halves with olive oil and line with basil leaves in a single layer.
- Combine remaining ingredients and add salt and pepper to taste. Spoon into bottom half of bread. Place top over and wrap tightly in plastic. Weigh down for about 20 minutes.
- Cut into slices, serve on platter with basil garnish.
