Pan Bagnat Recipe

Great for a picnic. The calories might be a bit high on this because the recipe calls for ripping out the middle part of the bread.

Ingredients
1 pound french bread, about 14 inches long
4 T extra-virgin olive oil
1/3 cup basil leaves, plus sprigs for garnish
12 ounce tuna, in olive oil
2 plum tomatoes, diced
2/3 cup kalamata olives, chopped
1/2 cup chopped sweet onion (such as Vidalia or Maui)
2 tablespoons fresh lemon juice
Directions
  1. Slice french bread down the middle. Tear out the inside, leaving a 3/4" shell. Brush both halves with olive oil and line with basil leaves in a single layer.

  2. Combine remaining ingredients and add salt and pepper to taste. Spoon into bottom half of bread. Place top over and wrap tightly in plastic. Weigh down for about 20 minutes.

  3. Cut into slices, serve on platter with basil garnish.
