Ranger cookies from Company's Coming. Modified to replace 1/2 of butter with apple sauce and subs some sugar with honey. Reduced calories to approximately 50. Makes 8 1/2 dozen.
| 1/2 | cup butter |
| 1/2 | cup unsweetened apple sauce |
| 1/2 | cup granulated sugar |
| 1/2 | cup brown sugar |
| 3/4 | cup honey |
| 2 | eggs |
| 2 | tsp vanilla |
| 2 | cups whole wheat flour |
| 1 1/2 | tsp baking soda |
| 1/2 | tsp baking powder |
| 1 1/2 | tsp salt |
| 2 | cups raisin bran |
| 1/4 | cup wheat bran |
| 2 | cups rolled oats |
| 1 | cup coconut |
| 1 | cup raisins |
- Cream butter and sugars. Beat in eggs, one at a time. Add vanilla.
- Stir flour, baking soda, baking powder, and salt together and add. Mix.
- Add cereal, oats, coconut and raisins. Mix well. Roll into 1 inch balls or push from spoon. Arrange on greased baking sheet. Bake at 375 for 6 to 8 minutes until golden.
