An easy recipe for snack cookies.
| 2 | egg, whole |
| 1 | cup Wheat Flour, White, All-purpose, Enriched, Bleached |
| 1 | cup Oatmeal, Instant |
| 1/2 | cup sugar, granulated |
| 1/2 | cup Oil, Vegetable Corn |
| 1 | tbsp Leavening Agents, Baking Powder, Low-sodium |
| 1 | tbsp Vanilla Extract |
- Preheat oven to 150º C degrees
- Separate eggs for a meringue (cold ones separate more easily). Whisk the egg whites and a bit sugar in a bowl (until mixture becomes glossy).
- Add more sugar, egg yorks, flour, baking powder, Oil and oatmeal. Finally, combine in the mix the vanilla extract.
- Drop mixture by teaspoonfuls onto a greased cookie sheet. Bake for 15 to 20 minutes.
