| 2 | tbs olive oil |
| 3 | large sweet potato |
| 2 | pinches dried rosemary |
| 2 | pinches salt |
| 2 | pinches pepper |
Preheat oven to 350. Coat bottom of glass or nonstick baking dish with olive oil. Wash and peel potatoes. Cut into med. sized pieces. Place in dish and turn them so they are coated with the olive oil. Sprinkle rosemary, salt and pepper. You can replace the rosemary with oregano too! Bake for 60 minutes or until soft.Categories
