Greek Chicken Kabobs Recipe

Makes 4 servings


serve with pita and a greek salad

Ingredients
12 oz chicken breast, cut into 1.5" cubes
2 zucchini, sliced into 1/2" rounds
1/2 onion, cubed
1/2 green bell pepper
1/2 red bell pepper
2 T balsamic vinegar
1 T red wine
4 cloves garlic, halved
1/2 t oregano
1/2 t pepper
1/4 t salt
Directions
  1. in shallow dish combine chicken, zucchini, onions, peppers, vinegar, wine, and garlic. Coved and chill 4 hours, stirring frequently.

  2. Preheat grill or broiler. Drain Chicken; thread onto 4 skewers. Lightly coat with nostick spray; sprinkle with oregano, salt, and pepper. Grill or broil 5-7 min, turn and grill 4-6 min longer, til chicken is not pink in the middle.
