Quick and Easy Casserole
| 4 | medium russet potatoes |
| 1 | lb bulk sausage |
| 1 | medium onion |
| 1 | bell pepper |
| 1 | can cream of celery soup |
| 1/2 | cup 2% milk |
| 8 | oz fat free shredded cheddar cheese |
- Dice and boil potatoes in salted water.
- Drain off water. Let potatoes cool and pour into 10x13 pan.
- While potatoes are cooking, brown 1lb sausage in frying pan with onion and bell pepper.
- Once sausage is cooked add cream of celery soup and milk. Mix well. Pour over potato mixture.
- Cover with cheddar cheese.
- Bake at 350 for 30 minutes.
