Low Fat Blueberry Bran Muffins Recipe

Makes 12 servings


These are nommy bluberry bran muffins. =)

Ingredients
75 g wheat bran
135 g unsweetened applesauce
56 g all whites
1/2 teaspoon vanilla extract
120 g flour
1 teaspoon baking soda
1 teaspoon baking powder
200 g frozen blueberries
13 g splenda
5 g cinnamon
Directions
  1. Moisten bran with water and let set ten minutes.

  2. Add in other ingredients to bran mush.

  3. Bake at 375 for 15-20 min or until a knife/toothpick stuck in the middle comes out clean. =D

  4. IMPORTANT NOTE:

  5. I actually used 2/3 c splenda granular (for baking), but used that item code to get the calorie levels correct.
