Baked Fish and Chips Recipe

Makes 4 servings


mmm with fresh tartar sauce!

Ingredients
2 russet potatoes, large, cut into 1/4" lengthwise slices
1/2 t paprika
1/4 c dry bread crumbs
1/2 t baking powder
1/4 t dried thyme
1/4 t basil
1/4 t pepper
1/8 t red pepper
1/8 t salt
1/4 c milk
1 egg
1 lb tilapia fillets (4)
Directions
  1. preheat oven to 350. Coat baking sheet with no-stick spray. Arrange potatoes, and spray with cooking spray. Sprinkle with paprika. Toss to combine. Bake 40 min, til tender but not browned. Remove from oven. Move potatoes so they cover half the baking sheet.

  2. In a med bowl, combine bread crumbs, baking powder, thyme, basil, pepper, red pepper, and salt. Add eggs and milk; mix well. Pat fish dry with paper towels. Dip into batter and place on baking sheet (may want to respray). Bake 15 min til potatoes are crisp, and fish is opaque, and breading is crunchy.
